GAJAR KA HALWA (CARROT PUDDING)


INGREDIENTS

Carrots (peeled and grated) - 1 kg 500 gm
Condensed Milk (Sweetened) - 1 can (400 gm)
Fresh Milk - 100 ml
Green Cardamom Powder - 1 tspn
Dry Fruits (Almonds, cashews and pistachios) - 100 gm
Sugar - If required

METHOD

1. Grated carrots are boiled in pressure cooker on full flame. No need to put any water or oil. One whistle is sufficient.
2. Take a heavy bottom pan. Pour in the boiled carrots, condensed milk and fresh milk. 
3. Cook it over full flame till all the water evaporates. Keep moving to prevent burning at the bottom. 4.Remove when bright red color of carrots is seen with white bits of milk and the texture is a bit crumbly. 
5. Put a teaspoon of ground green cardamom powder and crushed dry fruits.
6. Add more sugar only if you love it very sweet. 


Note - Do not add Ghee because it will overpower the taste. A bit of oil will be released by condensed milk itself.
