INSTANT GARLIC PICKLE


INGREDIENTS
GARLIC CLOVES - 200 gm (Slit into half or quarters)
Oil - 1 tbsn
Garam masala - 1 tspn
Salt - 1/2 tspn Iodised salt 1/4 tspn Rock salt
Sugar - 1 tspn
Mango powder (Amchoor) - 1 tspn
Red chilli powder - 1/2 tspn
Turmeric Powder - 1 tspn
Coriander Powder - 1 tspn
Onion - 1 chopped fine
Ginger - 1 sq inch chopped fine
Green Chillies  - 2 chopped fine
Cumin seeds - 1 tspn
Mustard seeds - 1 tspn

PROCEDURE
Take oil in a pan. Put mustard seeds to crackle. Add cumin seeds. After a minute add onions, ginger and green chillies. Cook for two minute and add coriander powder, red chilli powder, garam masala, amchoor, turmeric powder, salt and sugar. Cook for another minute on medium. Add garlic cloves and mix thoroughly for 30 seconds. Turn off the stove and put the lid on for 15 minutes. We do not want to soften the garlic. Let it cool. Store in air tight container in refrigerator for a week. Don't store for longer than 10 days.
