CARROT AND FENUGREEK VEGGI DELIGHT




INGREDIENTS
Carrots (diced cubes) – 500 gm
Fenugreek leaves (finely chopped) – 100 gm
Potatoes (diced cubes) – 250 gm
Onions (finely diced) – 2 medium
Garlic Cloves (finely chopped) – 5-6
Ginger (finely chopped) – 1 inch cube
Cumin seeds – 1 tspn
Salt – to taste
Turmeric powder – 1 tspn
Chili powder – ½ tspn
Hung curd – 1 tbsn
Oil – 2 tbsn

METHOD
1.      In a non-stick pan heat oil and add onions, garlic, ginger and cumin seeds. Cook it for 2 minutes on medium heat.
2.      Add turmeric and chili powder.
3.      Immediately Add the carrots, potatoes and fenugreek leaves. Simmer the stove and cook it covered till potatoes and carrots are tender.
4.      Add salt and hung curd and cook for 2 minutes till water completely evaporates. Try not to crush the potatoes and carrots.    


Note – Sweet taste of Carrots and bitter taste of fenugreek leaves balance each other. The aroma from fenugreek leaves is the main feature of this dish. The sour taste from curd will give a kick to the taste.
