11. Lotus Stem – Used as a vegetable for pickling and stir frying. It has a very crunchy texture and neutral taste. Very delicious when cooked with pungent oil like mustard oil.
22. Puffed Lotus seeds – Dried lotus seeds are puffed similar to popcorn. These have a very soft and spongy texture. They soak a lot of moisture and may become soggy so use in thick curries. Well suited when cooked with tofu or cottage cheese with gravy. These can also be roasted in a small amount of oil and salt to be eaten as evening snack.

33.Truffle Mushroom– It is described as a gourmet mushroom. It has pungent, intense, earthy and unique flavor. The truffle is used in extremely small quantities because it is extremely expensive. These are mostly found in Europe and North America. The best part is that these are found in Jungles deep into the soil and dogs are trained to spot them and dig them out. The most humorous thing is that it looks like dog poop.
44. Raw Bananas– These are used to make crunchy banana chips similar to potato chips. Used in curries, used for making kebabs and fritters. Best when cooked with coconut milk. Mostly used in India and Sri Lanka.
55. Bamboo Shoots – Used in fermented form and added to Stews, soups and mixed vegetable preparations. It is also pickled in some parts of India. Used commonly with pork, shrimp, coconut milk and hot chilies. Can be steamed, stir fried and boiled.
