ROASTING NUTS AT HOME
Everybody loves to have nuts like almonds, cashews, walnuts, peanuts sometime in the day. Nuts are very healthy as they provide vitamins, minerals and essential fatty acids. Their taste gets enhanced with a bit of salt but I hate when my hands get covered with salt while eating.
Nuts are usually fried in oil and salt is sprinkled on them which makes them a unhealthy treat. I have found out a wonderful way of roasting the nuts in hot salt. This procedure uses no oil at all and salt coating is very thin and won't make your hands dirty.
Procedure
Just heat the salt in a thick bottom pan. Take care that you do not burn the salt. Simmer it occasionally while roasting. Add one type of nut at one time. Keep stirring continuously so that nuts are roasted from all sides and none burns. Keep a sieve ready in order to discard the excess salt.
How to know that nuts are roasted
1. In case of almonds, you will start to hear cracking noise and few nuts will crack also. We want to roast but keep almonds white or very light brown inside.
2. In case of cashews, their color will turn to light brown or golden. Remember to simmer the stove from time to time and continuous stirring is required. Cashews take very little time.
3. In case of peanuts, cracking sound will come, some of peanuts will lose their skins and some will have cracked skin. Remember that you need to keep the peanuts white or very light brown otherwise nuts will turn bitter.
4. In case of walnuts, their skin will start to come out a bit showing that they are roasted. Remember to sieve them vigorously because they tend to hold more salt as compared to other nuts.
