Jal-Jeera is a cold beverage for summer days. Its sugar and salt replenishes your lost energy in summer days. The tangy taste makes you love it. It has that kick from tamarind and black pepper, flavor from mint and roasted cumin. Keep it chilled for day or two. Even add club soda to it and make a wonderful mock tail.
INGREDIENTS
WATER - 2 LTRS
TAMARIND PASTE - 3 TBSN
MINT LEAVES - 50 GMS
SUGAR - 50-100 GM ACCORDING TO TASTE
BLACK SALT - 1 TSN
CUMIN SEEDS - 2TSN
BLACK PEPPER POWDER - 1TSN
AMCHOOR POWDER (DRY MANGO POWDER)- 1 TSN
LEMON - 1
PROCEDURE
DRY ROAST CUMIN SEEDS IN A PAN AND CRUSH IT COARSELY. TO A MIXER JUG ADD TAMARIND PASTE, MINT LEAVES, LEMON JUICE, SALT, SUGAR, CUMIN SEEDS, BLACK PEPPER POWDER, AMCHOOR AND GRIND IT TO A FINE PASTE. POUR THIS PASTE INTO WATER AND MIX. TASTE IT AND ADJUST SUGAR AND SALT ACCORDING TO YOUR TASTE. LEAVE IT FOR 2 HRS IN REFRIGERATOR SO THAT THE FAVORS ARE FULLY INFUSED. NOW STRAIN IT THROUGH A FINE SIEVE. ADD CRUSHED ICE. SERVE IT CHILLED TO YOUR DEAR ONES. THEY WILL LOVE IT.
