SPONGE CAKE



MATERIALS REQUIRED

200 gm Refined flour
200gm Castor Sugar (Finely ground)
200 gm oil / butter / ghee
4 Eggs
1 tsn Baking Powder 
1 tsn Vanilla Essence

METHOD 

Sieve flour along with baking powder (not baking soda). Mix Butter / Oil / Ghee with fine grinded sugar. Mix eggs in different bowl with egg beater till frothy. Add egg mixture to butter and sugar. Add Vanilla essence. Add flour in small portion and keep mixing in one direction to incorporate a lot of air. Now that the mixture is ready, prepare a cake mould. Apply thin layer of oil in the mould, add some refined flour so that an even layer is formed throughout the mould. Pour the cake mixture in the mould and place it in a preheated oven at 160-170 C for 20-25 minutes. Check occasionally with pointed knife.If the knife comes out clean from the cake that means cake is done. Take out the cake and let it cool for some time and cut into slices of your choice.
