INGREDIENTS
Refined Flour - 340 gm
Yogurt - 150 gm
Oil - 200 ml
Sugar - 300gm
Eggs - 5
Resins - 65gm
Baking powder - 1/2 tspn
Baking Soda - 1/2 tspn
Vanilla - 1 tspn
PROCEDURE
1. Mix Sugar with Eggs with an egg beater till frothy.
2. Add oil and mix again.
3. Add yogurt and vanilla and mix again.
4. Sieve Flour along with baking powder and baking soda few times.
5. Start adding to the wet mixture in small quantities and continue mixing in one direction till all the flour gets incorporated.
6. Keep mixing for some time to incorporate maximum air into the mixture.
7. Add resins and fold then into the mix gently. Now take muffin mould.
8. Line then with oil and dust some flour evenly.
9. Pour the muffin mix till half the height in the moulds.
10. Bake in pre-heated oven at 180C for 20-25 minutes.
11. Check with pointed knife, if knife comes out clean, it means the muffins are done.
