INGREDIENTS FOR DHOKLA
Gram flour (besan) - 1 cup
Semolina (suji) - 1/4 cup
Rolled oats - 1/4 cup
Water - 1 cup
Oil - 1 tbsn
Sugar - 1 tbsn
Baking soda (soda bi carb) - 1/2 tsn
Salt - 1 tsn
Lemon juice - 1tsn
Fruit salt (mixture of citric acid and
soda bicarb, used for acidity - 1 tsn
Turmeric powder - 1/2 tsn
PROCEDURE
Mix all the above ingredients except baking
soda and fruit salt in a bowl. Mix them well. Take a microwave safe bowl and
apply a little oil to it. Put soda and fruit salt into the mixture and mix
quickly and pour in the bowl and immediately put in microwave (full power) for
6 minutes. Take it out and let it rest for 5-10 minutes.
INGREDIENTS FOR TEMPERING
Water - 2 cup
Vinegar - 1/4 cup
Mustard seeds - 1 tsn
Curry leave - 5-6
Ginger paste / grated - 1 tsn
Sugar - 2 tbsn
Oil - 2 tbsn
Green chillies - 4 (slit into four)
PROCEDURE
Heat oil in pan. Put mustard seeds
and let them crackle. Add chillies, curry leaves, ginger paste and let then
cook for a minute. Add water, vinegar, sugar. Let it boil on full for 5 minutes
and then let it cool to room temperature.
Finally pour the liquid over the
dhokla prepared above and let it soak liquid for 10-15 minutes. Cool it in
fridge. Cut it into cubes and sprinkle coriander leaves and more chillies
