INSTANT GARLIC PICKLE

INGREDIENTS GARLIC CLOVES - 200 gm (Slit into half or quarters) Oil - 1 tbsn Garam masala - 1 tspn Salt - 1/2 tspn Iodised salt 1/4 tspn Rock salt Sugar - 1 tspn Mango powder (Amchoor) - 1 tspn Red chilli powder - 1/2 tspn Turmeric Powder - 1 tspn Coriander Powder - 1 tspn Onion - 1 chopped fine Ginger - 1 sq inch chopped fine Green Chillies - 2 chopped fine Cumin seeds - 1 tspn Mustard seeds - 1 tspn PROCEDURE Take oil in a pan. Put mustard seeds to crackle. Add cumin seeds. After a minute add onions, ginger and green chillies. Cook for two minute and add coriander powder, red chilli powder, garam masala, amchoor, turmeric powder, salt and sugar. Cook for another minute on medium. Add garlic cloves and mix thoroughly for 30 seconds. Turn off the stove and put the lid on for 15 minutes. We do not want to soften the garlic. Let it cool. Store in air tight container in refrigerator for a week. Don't store for longer than 10 days.

CARROT AND FENUGREEK VEGGI DELIGHT

INGREDIENTS Carrots (diced cubes) – 500 gm Fenugreek leaves (finely chopped) – 100 gm Potatoes (diced cubes) – 250 gm Onions (finely diced) – 2 medium Garlic Cloves (finely chopped) – 5-6 Ginger (finely chopped) – 1 inch cube Cumin seeds – 1 tspn Salt – to taste Turmeric powder – 1 tspn Chili powder – ½ tspn Hung curd – 1 tbsn Oil – 2 tbsn METHOD 1. In a non-stick pan heat oil and add onions, garlic, ginger and cumin seeds. Cook it for 2 minutes on medium heat. 2. Add turmeric and chili powder. 3. Immediately Add the carrots, potatoes and fenugreek leaves. Simmer the stove and cook it covered till potatoes and carrots are tender. 4. Add salt and hung curd and cook for 2 minutes till water completely evaporates. Try not to crush the potatoes and carrots.
